Known for his creative twists on traditional recipes, Chef Sundas shared some fantastic tips to elevate your mushroom soup while keeping its enveloping warmth intact. With the launch of his new venture, Tapori, which promises delightful street food influences from India, Kerala, and Nepal, his culinary expertise is a treasure trove of flavors waiting to be explored.

    When you envision the quintessential cream of mushroom soup, it’s likely that an image of abundant mushroom goodness comes to mind, infused with the aromatic essence of garlic and onion, fresh herbs like thyme and parsley, and a luscious mix of cooking wine and heavy cream. Sure, a homemade version made from fresh ingredients beats the canned stuff any day—everyone can agree on that. But let’s elevate it even more with a few straightforward enhancements that can turn an ordinary bowl into something truly extraordinary.

    One of Chef Sundas’s first suggestions is an absolute game changer: roasted garlic. “Roasted garlic has this incredible knack for mellowing its sharpness while adding a sweet, nutty richness that pairs beautifully with mushrooms,” he explained. If you’ve never tried roasting garlic, it’s time to give it a go. The process is simple: slice the top off a bulb, wrap it in foil, and slow-roast it in the oven until it’s enveloped in fragrant aromatics and deliciousness. Once it cools, squeeze the cloves out to reveal a sweet, caramelized flavor that effortlessly blends into your soup’s broth, enriching it without overpowering the earthy mushrooms you love.

    But let’s not stop there. Chef Sundas also recommends incorporating dried shiitake mushrooms. “Dried shiitake mushrooms offer an earthy, smoky, and savory depth that can elevate your soup to a whole new level, regardless of whether you’re using a tamarind base or something creamy,” he shared. Interestingly, dried shiitakes often pack more flavor than their fresh counterparts, contributing a robust umami boost to your dish.

    Using these dried gems is as uncomplicated as a soak. Simply grab a handful of shiitake mushrooms and submerge them in warm or room-temperature water to rehydrate. If you want to speed up the process, warm water is the way to go; however, using room temperature allows those wonderful earthy flavors to leach into your broth more gently. As they soak, they’ll create a rich mushroom broth that you can use to elevate your soup. Just a heads up—this broth is not something to be underestimated. It’s intense! To strike the right balance, think about replacing a cup or two of your usual vegetable or chicken stock with that deep mushroom broth. This substitution will enhance your soup with a punch of umami—one that enhances the magic without overshadowing the other delicious components.

    With these small adjustments in your kitchen, you can transform a simple bowl of mushroom soup into a gourmet experience that warms both the belly and the soul.
